INGREDIENTS
6.5 oz Salmon Fillet
1/2 medium Sweet Potato
1 cup Green Beans
1 tsp Olive Oil (for mash)
1 tsp Olive Oil (for beans)
2 Garlic Cloves
Pinch of Salt
Pinch of Pepper
PREPARATION
Pat the salmon dry and season with a pinch of salt and pepper.
Heat a non-stick skillet over medium-high heat. Add one teaspoon of olive oil.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes per side until just cooked through. Remove and let rest.
Meanwhile, peel and cube the sweet potato. Boil in water until soft, about 10-12 minutes, then drain.
Mash the boiled sweet potato with one teaspoon of olive oil, a pinch of salt, and a little pepper until smooth.
Trim the ends off the green beans. In another skillet, heat a small amount of olive oil and sauté minced garlic for about 30 seconds. Add the green beans and lightly sauté for 4-5 minutes until tender-crisp, seasoning with salt and pepper.
Plate the salmon next to a serving of sweet potato mash and garlic green beans. Serve warm.
