350g Extra Firm Tofu
100g Mixed Greens
2 tsp Olive Oil
1 Garlic Clove
1 tbsp Lemon Juice
1 tbsp Nutritional Yeast

PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into cubes.
Clean the lion's mane mushrooms and tear them into bite-sized pieces.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Add the mushrooms and season lightly with salt and pepper. Cook until the edges are crispy, about 5-7 minutes, then remove them from the skillet.
In the same skillet, add the tofu cubes. Sear each side until golden, about 3-4 minutes per side. Season with a pinch of salt and pepper during cooking.
Add the minced garlic (or thinly sliced garlic clove) to the skillet and sauté briefly until fragrant, about 30 seconds.
