PREPARATION
Heat a non-stick skillet over medium heat and add the olive oil.
Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
Remove the spinach and set aside. In the same skillet, add the turkey sausage link and cook until warmed through and lightly browned, about 3-4 minutes. Slice or crumble the sausage as desired.
Lower the heat to medium-low and pour in the egg whites. Stir gently continuously for soft scrambled egg whites. Add the butter for extra richness.
