A savory breakfast scramble combining the lean protein of egg whites and turkey sausage with nutrient-rich spinach and the natural sweetness of roasted sweet potato. Lightly sautéed in olive oil, this dish offers a satisfying mix of textures and flavors to kickstart your day.
INGREDIENTS
6 egg whites (approx. 198g)
1 whole egg (50g)
1 turkey sausage link (42g)
1 small sweet potato (130g)
1 cup raw spinach (30g)
2 tsp olive oil (9g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F. Pierce the small sweet potato with a fork and roast it on a baking sheet for about 25-30 minutes or until fork-tender.
While the sweet potato is roasting, heat 1 tsp of olive oil in a non-stick skillet over medium heat.
Add the turkey sausage (sliced or crumbled) to the skillet and lightly brown it for 2-3 minutes.
Pour in the egg whites and whole egg, gently stirring to combine.
Add the spinach and season with salt and pepper. Continue cooking until the eggs are softly scrambled and the spinach is wilted, about 3-4 minutes.
Once the sweet potato is done, remove it from the oven. Cut it into cubes or slices as desired.
Drizzle the remaining 1 tsp of olive oil over the roasted sweet potato if desired, and serve alongside the scramble.
Plate the scramble with roasted sweet potato and enjoy your nutrient-packed breakfast.
