INGREDIENTS
7.5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tablespoon Olive Oil
2 Garlic Cloves
Salt & Pepper to taste
1 Lemon Wedge
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper.
Heat half of the olive oil in a skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a crisp crust forms.
Flip the salmon and cook for an additional 3-4 minutes until the fish is just cooked through. Remove from heat and squeeze a lemon wedge over the top.
For the green beans, blanch them in boiling water for 2 minutes until just tender, then drain.
In a separate pan, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant, then add the blanched green beans. Toss to coat and season with a pinch of salt.
Steam the cauliflower until very tender, about 8-10 minutes. Transfer to a bowl and mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon with a generous side of garlic green beans and a serving of creamy cauliflower mash. Serve immediately.
