INGREDIENTS
1 block (396g) extra firm tofu
1 cup broccoli, chopped
1 medium red bell pepper, sliced
1 cup snap peas
0.5 tbsp sesame oil
1 tbsp tamari (soy sauce)
1 tsp sesame seeds
2 cloves garlic, minced
1 tsp fresh ginger, grated
PREPARATION
Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
Press the tofu to remove excess water, then cut into 1-inch cubes.
In a large bowl, combine the tofu cubes with minced garlic, grated ginger, tamari, and sesame oil. Gently toss to coat evenly.
Add the broccoli, sliced red bell pepper, and snap peas to the bowl, mixing them with the tofu and sauce.
Spread the tofu and vegetables evenly on the sheet pan, ensuring they are in a single layer.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the tofu edges are golden and the vegetables are tender with slight crispiness.
Remove from the oven and sprinkle with sesame seeds before serving.
