INGREDIENTS
5 oz Chicken Breast (141g)
150g Potato Gnocchi
1 tbsp Fresh Basil Pesto (15g)
1/2 cup Cherry Tomatoes (75g)
1 tsp Olive Oil (5g)
PREPARATION
Preheat your oven to 400°F. Toss the cherry tomatoes with a drizzle of olive oil, a pinch of salt, and pepper, then spread them on a baking sheet. Roast in the oven for about 10-12 minutes until they start to blister.
While the tomatoes roast, season the chicken breast with salt and pepper. Heat a non-stick skillet over medium-high heat and add a small drizzle of olive oil. Sear the chicken for about 5-6 minutes on each side until fully cooked and golden on the outside. Remove from the skillet and let rest.
In the meantime, boil a pot of salted water. Add the potato gnocchi and cook until they float to the surface, about 2-3 minutes. Drain the gnocchi.
Return the skillet to medium-high heat. Add the drained gnocchi and let them sear for 2-3 minutes until crispy on the edges.
Slice the rested chicken breast into strips. Remove the roasted cherry tomatoes from the oven.
Toss the crispy gnocchi with fresh basil pesto, then gently fold in the sliced chicken and roasted tomatoes.
Plate the dish while warm, and enjoy this balanced meal with lively flavors and satisfying textures.
