Seared Salmon Fillet with Steamed Asparagus and Garlic Mashed Cauliflower
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet accompanied by tender steamed asparagus and creamy garlic mashed cauliflower. The salmon is seared to a crispy finish on the outside while remaining moist and flaky on the inside, perfectly complemented by the fresh, vibrant flavor of asparagus and the rich, garlicky smoothness of mashed cauliflower.
INGREDIENTS
6 ounces Salmon Fillet
1 cup Steamed Asparagus
2 cups Chopped Cauliflower
1 clove Garlic
1/4 cup Unsweetened Almond Milk
1 teaspoon Olive Oil
PREPARATION
Pat the salmon fillet dry with paper towels and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down and sear for about 3-4 minutes until the skin is crispy. Flip and sear the other side for 3-4 minutes until cooked to your liking.
Meanwhile, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the garlic mashed cauliflower, steam the chopped cauliflower and garlic clove until very tender, about 8-10 minutes. Transfer to a bowl.
Add the unsweetened almond milk to the steamed cauliflower and garlic, then mash until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic mashed cauliflower. Serve warm and enjoy.
