1/2 medium Bell Pepper (75g)
1 cup sliced Zucchini (100g)
1 small Red Onion (50g)
1 tsp Extra Virgin Olive Oil
1 Garlic Clove
2 tbsp Fresh Parsley
PREPARATION
Preheat the oven to 425°F (220°C).
Dice the white potato into small cubes to ensure even roasting. Rinse and slice the bell pepper, zucchini, and red onion into bite-sized pieces.
In a large bowl, toss the diced potato and chopped veggies with the olive oil, minced garlic, salt, and pepper.
