1/2 cup Diced Tomato
1 cup Fresh Spinach
1/4 cup Part-Skim Mozzarella Cheese, shredded
1 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
1 tsp Dried Oregano
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove seeds and membranes. If desired, lightly brush the inside with olive oil.
In a skillet over medium heat, warm the olive oil and sauté the chopped onion until soft, about 2-3 minutes.
