INGREDIENTS
6 oz Salmon Fillet
100 g Asparagus Spears
150 g Cauliflower
1 tsp Extra Virgin Olive Oil
1 tbsp Nonfat Greek Yogurt
Salt and Pepper, to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and lightly coat with a small amount of olive oil.
Place the salmon in the skillet skin-side down, searing for about 4-5 minutes until a golden crust forms, then flip and cook an additional 3-4 minutes until just cooked through.
While the salmon cooks, steam the asparagus in a steamer or a pot with a steaming basket for about 4-5 minutes until tender-crisp.
For the cauliflower mash, cut the cauliflower into florets and steam them until very tender (about 8-10 minutes).
Transfer the steamed cauliflower to a blender or food processor, add the teaspoon of olive oil and the tablespoon of Greek yogurt, then blend until smooth. Season with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Serve immediately.
