200g Extra-Firm Tofu
2 Eggs
1/2 cup Kimchi
1/2 cup Cooked Brown Rice
1/4 cup Shelled Edamame
1/2 cup Sliced Red Bell Pepper
1 tsp Sesame Oil
PREPARATION
Press the tofu to remove excess water, then cut it into small cubes.
Heat a non-stick skillet over medium-high heat, add a few drops of sesame oil, and fry the tofu cubes until they turn crispy and golden on all sides. Remove and set aside.
In the same skillet, add the remaining sesame oil. Crack the eggs into the pan and scramble until just set.
