5 large egg whites
2 ounces turkey sausage
1 cup fresh spinach

PREPARATION
Preheat a non-stick skillet over medium heat.
Add 1.5 tablespoons of extra virgin olive oil to the skillet.
Sauté the turkey sausage slices for 2-3 minutes until lightly browned, then remove and set aside.
In the same skillet, add the fresh spinach and sauté for about 1-2 minutes until wilted. Remove and set aside with the sausage.
