INGREDIENTS
8 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower Florets
3 Garlic Cloves
1 tsp Extra Virgin Olive Oil
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half the olive oil.
Place the salmon in the skillet skin-side down and sear for about 4-5 minutes until a crust forms, then flip and cook another 3-4 minutes until done to your liking.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until bright green and tender.
In a small pot, combine the cauliflower florets and garlic cloves with a splash of water. Cover and simmer for 10 minutes until the cauliflower is very tender.
Drain the cauliflower and garlic, then transfer to a blender. Add the remaining olive oil and blend until smooth, seasoning with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and a generous serving of the garlic cauliflower mash. Serve warm.
