INGREDIENTS
6 oz Halibut Fillet
1 tbsp Extra Virgin Olive Oil
1/2 cup Diced Mango
2 tbsp Minced Red Onion
1 small Jalapeño
Juice of 1 Lime
2 tbsp Chopped Fresh Cilantro
6 spears Asparagus
PREPARATION
Preheat your oven to 425°F for the asparagus and set a skillet over medium-high heat for the halibut.
Trim the asparagus and toss with half of the olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 10-12 minutes until tender and slightly crispy.
Meanwhile, in a bowl, combine the diced mango, minced red onion, chopped jalapeño, lime juice, and cilantro. Stir well and season with salt to taste. Set aside to let the flavors meld.
Pat the halibut dry with paper towels. Season both sides with salt and pepper.
Add the remaining olive oil to the heated skillet. Place the halibut fillet skin-side down (if applicable) and sear for about 3-4 minutes until golden. Flip carefully and cook for an additional 3-4 minutes until the fish is opaque and flakes easily.
Plate the seared halibut, top with a generous spoonful of the mango salsa, and arrange the roasted asparagus on the side. Serve immediately.
