INGREDIENTS
5 oz Salmon Fillet
100 g Green Beans
200 g Cauliflower
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil (for green beans)
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt and Pepper
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down (if applicable) for about 3-4 minutes until a golden crust forms, then flip and cook for another 2-3 minutes until desired doneness.
Trim and wash the green beans. In a separate small pan, heat 1 tsp olive oil over medium heat and add minced garlic until fragrant, then toss in the green beans and sauté for about 4-5 minutes until tender-crisp. Season with a pinch of salt and pepper.
Cut the cauliflower into florets and steam or boil until very tender, about 8-10 minutes.
Drain the cauliflower and place it in a blender or use a potato masher. Add the nonfat Greek yogurt, 1 tsp olive oil, and a pinch of salt and pepper. Blend or mash until smooth and creamy.
Plate the salmon fillet alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately and enjoy your nutrient-packed dinner.
