INGREDIENTS
4 oz Lean Ground Beef
1 large Bell Pepper
1/2 cup Black Beans (rinsed)
1/4 cup Red Onion, chopped
1/2 cup Diced Tomatoes
1 clove Garlic, minced
1/2 tbsp Olive Oil
1 tsp Ground Cumin
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C).
Cut the top off the bell pepper and remove seeds and membranes. Set aside.
In a skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic and sauté for 2-3 minutes until softened.
Add the lean ground beef to the skillet. Cook, breaking up the meat, until it is browned and almost fully cooked.
Stir in the diced tomatoes, black beans, and ground cumin. Season with salt and pepper, and let the mixture simmer for 3-4 minutes so the flavors meld.
Spoon the beef and bean mixture into the hollowed bell pepper, packing it generously.
Place the stuffed bell pepper in a baking dish and cover loosely with foil. Bake in the preheated oven for 20-25 minutes, until the pepper is tender.
Remove foil for the last 5 minutes of baking if you want a slightly roasted top. Serve warm.
