Enjoy a vibrant plate featuring succulent shrimp lightly crispy on the edges, enhanced by garlicky, herb-infused flavors paired with tender roasted zucchini. This dish is a perfect blend of bright, fresh herbs and savory warmth ideal for any meal.
INGREDIENTS
6 ounces Shrimp
1 medium Zucchini
1 tbsp Olive Oil
2 cloves Garlic
2 tbsp Fresh Herbs (Parsley & Thyme)
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Slice the zucchini into rounds or half-moons, toss with half the olive oil, a pinch of salt and pepper.
Spread the zucchini evenly on a baking sheet and roast for about 15-20 minutes until tender and slightly golden.
Meanwhile, pat the shrimp dry. In a bowl, toss the shrimp with minced garlic, fresh herbs, lemon juice, salt, and pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Place the shrimp in the skillet in a single layer, allowing them to sear for 2-3 minutes on each side until they turn pink and opaque with a crispy edge.
Remove the shrimp from the skillet and serve immediately alongside the roasted zucchini.
Garnish with extra herbs or a squeeze of lemon if desired.
