PREPARATION
Preheat your oven to 400°F (200°C).
Press the tofu to remove excess moisture. Cut the tofu into 1/2-inch cubes and lightly toss with a pinch of salt and a few drops of soy sauce.
Arrange the tofu cubes on a lightly greased baking sheet. Bake for 25-30 minutes, turning halfway through, until the tofu is golden and crispy.
While the tofu bakes, cut the broccoli into florets and toss with a small drizzle of olive oil, salt, and pepper. Spread the broccoli on another baking sheet and roast in the oven for 20 minutes or until tender with slightly charred edges.
