PREPARATION
Separate the egg whites from whole eggs or use a carton of egg whites and pour them into a bowl.
Slice 1/3 link of turkey sausage into small rounds.
Heat a non-stick skillet over medium heat and add 3 teaspoons of olive oil.
Add the turkey sausage slices to the skillet and sauté for 2-3 minutes until they begin to brown.
Add the fresh spinach and halved cherry tomatoes to the skillet. Sauté until the spinach wilts, about 1-2 minutes.
Pour in the egg whites, gently stirring to combine with the vegetables and sausage. Cook until the egg whites start to set, about 3-4 minutes.
