300g Firm Tofu
100g Shelled Edamame
100g Broccoli florets

1 medium Carrot
1 tsp Sesame Oil
1 tbsp Cornstarch
2 cloves Garlic
1 tbsp Fresh Ginger (grated)
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Seeds
1 stalk Green Onion
PREPARATION
Press and drain the tofu for at least 15 minutes to remove excess water. Cut the tofu into cubes.
Place the tofu cubes in a bowl and lightly toss with cornstarch until evenly coated.
Heat a non-stick skillet over medium-high heat and add the sesame oil. Sauté the tofu until golden and crispy on all sides. Remove and set aside.
In the same skillet, add minced garlic and grated ginger. Sauté briefly until fragrant.
Add the broccoli florets, sliced red bell pepper, and carrot slices to the skillet. Stir-fry for 3-4 minutes until the vegetables are just tender yet still crisp.
Stir in the shelled edamame and return the crispy tofu to the skillet.
Drizzle low-sodium soy sauce over the mix and toss gently to combine all the flavors.
