Enjoy a vibrant plate featuring juicy lean turkey meatballs served atop a nest of fresh zucchini noodles and drizzled with a homemade, aromatic marinara sauce. The blend of savory herbs and light, natural ingredients delivers a satisfying meal that’s both nutritious and delicious.
INGREDIENTS
6 oz Lean Ground Turkey
1 medium Zucchini (spiralized)
1/2 cup Fresh Marinara Sauce
1 Egg White
1 tbsp Whole Wheat Breadcrumbs
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Fresh Basil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine lean ground turkey, egg white, whole wheat breadcrumbs, minced garlic (save one clove for sauce), salt, and pepper. Mix gently until just combined.
Form the mixture into small meatballs, about the size of a golf ball.
Heat half the olive oil in a skillet over medium heat. Brown the meatballs on all sides for 4-5 minutes before transferring them to a baking sheet. Bake in the preheated oven for 10-12 minutes, or until cooked through.
While the meatballs bake, spiralize the zucchini into noodles and set aside.
In the same skillet, add the remaining olive oil and the reserved minced garlic along with a chopped clove if desired, and sauté briefly before adding the fresh marinara sauce. Allow simmering for 2-3 minutes and stir in chopped fresh basil.
Plate the zucchini noodles, top with the warm marinara sauce, and place the turkey meatballs on top.
Garnish with additional fresh basil if desired, and enjoy your balanced, wholesome meal.
