INGREDIENTS
200g Chicken Thigh (boneless, skinless)
1 tbsp Maple Syrup
100g Carrots
1 tsp Olive Oil
1 clove Garlic
2 sprigs Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, whisk together maple syrup, olive oil, minced garlic, salt, and pepper.
Place the chicken thigh in a baking dish and brush generously with the maple glaze on both sides. Tuck a couple of thyme sprigs around the chicken for added flavor.
Toss the peeled and cut carrots in a little olive oil, salt, and pepper.
Arrange the carrots around the chicken in the baking dish.
Roast in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the carrots are tender and slightly crispy on the edges.
If desired, brush the chicken with any remaining glaze halfway through for extra flavor.
Remove from the oven, let rest for a few minutes, and serve.
