150g Baby Potatoes

1 clove Garlic

PREPARATION
Preheat your oven to 425°F.
Wash the baby potatoes and cut them in halves. Toss them with half of the olive oil, a pinch of salt, and pepper.
Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until crispy and golden, tossing halfway through.
While the potatoes roast, pat the sirloin steak dry with paper towels. Season both sides with salt and pepper.
Finely mince the garlic and roughly chop the thyme and rosemary. Press them onto the steak to form an herb crust.
