Savor tender roasted chicken paired with earthy garlic butter mushrooms and crispy roasted potatoes. This dish brings together juicy, flavorful chicken with the rich aroma of garlic-infused butter and the satisfying crunch of well-roasted potatoes, making it a wholesome, balanced meal.
INGREDIENTS
5 oz Chicken Breast
1 cup sliced Mushrooms
1 medium Potato (approx. 150g)
1 clove Garlic
1 tsp Butter
1 tsp Olive Oil
Salt & Pepper to taste
2 sprigs Fresh Thyme (optional)
PREPARATION
Preheat your oven to 425°F (220°C).
Pat the chicken breast dry and season with salt and pepper on both sides.
In a small saucepan, melt the butter with the minced garlic over low heat to infuse the flavor; set aside.
Cut the potato into 1/2-inch cubes and toss with olive oil, salt, and pepper.
Spread the potato cubes on a baking sheet and roast in the preheated oven for about 25-30 minutes, stirring halfway through, until crispy and golden.
Meanwhile, place the chicken breast in an oven-proof skillet. Arrange the sliced mushrooms around the chicken, and drizzle the garlic butter over both the chicken and mushrooms.
Add the optional thyme sprigs for extra aroma. Transfer the skillet to the oven and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the mushrooms are tender.
Remove from the oven and let the chicken rest for a few minutes before serving alongside the crispy roasted potatoes.
