Hearty Egg and Crispy Sweet Potato Skillet with Lean Turkey Sausage and Fresh Spinach
Enjoy a warm and satisfying skillet meal loaded with crisp sweet potato cubes, lean turkey sausage, and fresh spinach, all brought together with eggs cooked to perfection. This dish offers a beautiful blend of textures and flavors—salty, savory sausage meets the natural sweetness of sweet potato, balanced by light, fresh spinach and the rich creaminess of eggs.
INGREDIENTS
2 large Eggs (approx 100g)
3 ounces Lean Turkey Sausage (approx 85g)
1/2 medium Sweet Potato (approx 100g)
1 cup Fresh Spinach (approx 30g)
1 teaspoon Olive Oil (approx 4.5g)
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Place them in a bowl and lightly season with salt and pepper.
Heat a non-stick skillet over medium heat and add the olive oil.
Add the sweet potato cubes to the skillet and cook for about 8-10 minutes, stirring occasionally, until they start to turn tender and slightly crispy on the edges.
Slice the lean turkey sausage into rounds. Add the sausage to the skillet and continue to cook for an additional 4-5 minutes until the sausage is browned.
Stir in the fresh spinach and allow it to wilt, about 1-2 minutes.
Make two small wells in the mixture and crack the eggs into the wells. Cover the skillet with a lid and cook until the eggs are done to your liking, around 3-4 minutes for a slightly runny yolk or longer for firmer eggs.
Season the eggs with a pinch of salt and pepper, and serve hot directly from the skillet.
