INGREDIENTS
5 oz Chicken Breast, Skinless, Boneless
1 cup Brussels Sprouts
1.5 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
1 sprig Fresh Rosemary
1 sprig Fresh Thyme
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the lemon juice, olive oil, minced garlic, chopped rosemary, and thyme. Season with a pinch of salt and black pepper.
Pat the chicken breast dry and place it in a baking dish. Rub the lemon-herb mixture evenly over the chicken.
Trim and halve the Brussels sprouts. Toss them with a drizzle of olive oil, salt, and pepper in a separate bowl.
Arrange the Brussels sprouts around the chicken in the baking dish.
Roast in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the Brussels sprouts are tender with crispy edges.
Remove from the oven and let it rest for a couple of minutes before serving.
