Enjoy a burst of citrus and garlic on a beautifully pan-seared chicken thigh paired with perfectly roasted asparagus. This dish brings together crispy edges, juicy meat, and fresh vegetal crunch with a hint of zesty lemon for a delightful dinner option.
INGREDIENTS
1 piece Chicken Thigh (200g, boneless, skinless)
2 tsp Extra Virgin Olive Oil
1 bunch Asparagus (approx. 85g)
1/2 Lemon
2 cloves Garlic
Salt (pinch)
Black Pepper (pinch)
Fresh Parsley (2 sprigs)
PREPARATION
Pat the chicken thigh dry with paper towels and season both sides with salt and black pepper.
In a small bowl, combine the juice of half a lemon, 1 tsp olive oil, and crushed garlic. Rub this mixture on the chicken for a zesty marinade.
Heat a non-stick skillet over medium-high heat and add the remaining 1 tsp olive oil. Once hot, place the chicken thigh in the skillet, skin-side down if applicable, and sear for about 4-5 minutes until the exterior is crispy.
Flip the chicken and reduce the heat to medium. Continue cooking for another 6-8 minutes until the chicken is cooked through and reaches an internal temperature of 165°F.
While the chicken cooks, preheat your oven to 425°F. Place the asparagus on a baking sheet, drizzle with a light brush of olive oil, and sprinkle a pinch of salt and pepper.
Roast the asparagus in the oven for 10-12 minutes until tender and slightly charred.
Once the chicken is done, transfer it to a plate, drizzle with any remaining pan juices and garnish with fresh parsley and a little extra lemon zest.
Serve the crispy lemon garlic chicken thigh alongside the roasted asparagus, and enjoy your balanced, flavorful meal.
