INGREDIENTS
6 oz Lean Sirloin Steak (170g)
1 cup Asparagus (134g)
100g Red Potatoes
1 tsp Olive Oil
2 cloves Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
1 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Wash and trim the asparagus and cut red potatoes into small cubes.
In a bowl, toss the potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy and golden, stirring halfway through.
Meanwhile, season the steak generously with salt and pepper. Crush the garlic cloves and mix with chopped rosemary and thyme.
Heat a skillet over medium-high heat and sear the steak for about 3-4 minutes per side for medium-rare, adding the garlic-herb mixture to infuse flavor. Adjust cooking time to achieve desired doneness.
At the last 7 minutes of the potato roasting, add the asparagus to the baking sheet, tossing them with a little extra salt and herb mixture.
Once cooked, let the steak rest for a few minutes. Slice the steak against the grain and serve with the roasted asparagus and crispy potatoes.
Garnish with freshly chopped parsley before serving.
