A nutritious and satisfying meal that’s both delicious and balanced.
INGREDIENTS
4 oz Chicken Breast (113g)
1/4 cup Whole Wheat Panko Breadcrumbs (15g)
1/4 cup Marinara Sauce (62g)
1/8 cup Part-Skim Mozzarella Cheese (28g)
1 cup Green Beans (125g)
1 tsp Olive Oil
1/2 tsp Dried Oregano
PREPARATION
Preheat your oven to 400°F (200°C).
Set up a shallow dish with the whole wheat panko breadcrumbs mixed with dried oregano. Lightly brush the chicken breast with a small amount of olive oil and then coat evenly with the breadcrumb mixture.
Place the breaded chicken on a parchment-lined baking sheet. Bake for 18-20 minutes until the chicken is cooked through and the coating is crispy.
While the chicken is baking, toss the green beans with the remaining olive oil, a pinch of salt, and pepper. Spread them out on a separate baking sheet and roast in the oven for about 12-15 minutes until tender and slightly charred.
Once the chicken is nearly done, remove the baking sheet and spoon marinara sauce evenly over each piece. Sprinkle the part-skim mozzarella cheese on top.
Return the chicken to the oven for an additional 3-5 minutes or until the cheese is melted and bubbly.
Plate the crispy chicken parmesan alongside the roasted green beans and serve immediately.
