INGREDIENTS
1 cup Sweet Potato Gnocchi (150g)
4 Chicken Sausage links (200g)
2 cups fresh Spinach (60g)
2 cloves Garlic (6g)
1 tbsp Olive Oil (13.5g)
Salt and Pepper to taste
PREPARATION
Bring a pot of salted water to a simmer and add the sweet potato gnocchi. Cook until they float to the surface, about 2-3 minutes, then drain well.
While the gnocchi is cooking, slice the chicken sausage into rounds. In a large skillet, heat half the olive oil over medium heat and add the sausage slices. Cook until they are browned and heated through, about 5-7 minutes. Remove and set aside.
In the same skillet, add the remaining olive oil and sauté the minced garlic over medium heat until fragrant, about 1 minute.
Add the fresh spinach to the skillet and cook until just wilted, about 2 minutes. Season lightly with salt and pepper.
Return the chicken sausage to the skillet along with the drained gnocchi. Toss everything together and sear for an additional 2 minutes to develop a slight crisp on the gnocchi.
Adjust seasoning with salt and pepper if needed, then serve warm.
