PREPARATION
Preheat your oven to 425°F (220°C). Peel and cube the sweet potato into bite-sized pieces.
Toss the sweet potato cubes with a drizzle of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and crispy around the edges.
