The delicate flavors of the salmon and the subtle sweetness of the potato complement each other beautifully, making it a nourishing and satisfying meal.
INGREDIENTS
6.5 oz Salmon Fillet (184g)
1 cup Green Beans (125g)
110g Sweet Potato
1 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once the oil is shimmering, place the salmon skin-side down if applicable. Sear the salmon for about 3-4 minutes until a golden crust forms.
Carefully flip the salmon and cook for another 3 minutes or until the fish is just cooked through. Remove from the skillet and let it rest.
Meanwhile, steam the green beans by placing them in a steamer basket over boiling water. Steam for about 4-5 minutes until tender yet crisp.
For the sweet potato mash, if not already cooked, peel and cube the sweet potato. Boil in water until tender (about 10-12 minutes), then drain and mash until smooth. Lightly season with salt and pepper.
Plate the seared salmon alongside the steamed green beans and a serving of sweet potato mash. Serve immediately and enjoy your balanced dinner.
