INGREDIENTS
320 grams Extra Firm Tofu
1/2 cup Shelled Edamame (~75 grams)
1 cup Broccoli Florets
1 medium Red Bell Pepper
1 medium Carrot
1 tablespoon Sesame Oil
2 cloves Garlic
1 tablespoon Fresh Ginger
1 tablespoon Low-Sodium Soy Sauce
1 tablespoon Cornstarch
1 teaspoon Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a large non-stick pan or wok over medium-high heat.
Add the tofu cubes and stir-fry until they turn golden and crispy on all sides, about 6-8 minutes.
Remove the tofu from the pan and set aside.
In the same pan, add minced garlic and grated ginger and sauté for about 30 seconds until fragrant.
Add the broccoli, sliced red bell pepper, and carrot slices to the pan and stir-fry for 3-4 minutes until just tender yet crisp.
Return the crispy tofu to the pan along with the shelled edamame and drizzle with low-sodium soy sauce.
Toss everything gently until well combined and heated through.
Finish by sprinkling sesame seeds on top before serving.
