INGREDIENTS
6 oz Shrimp (cooked)
1 medium Zucchini (spiralized)
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1/2 Lemon, juiced
1/2 tsp Red Pepper Flakes
1 tbsp Fresh Parsley, chopped
Salt & Pepper to taste
PREPARATION
If not already done, peel and devein the shrimp. Pat dry with paper towels.
Spiralize the zucchini into noodles and set aside.
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and a pinch of red pepper flakes. Sauté for about 30 seconds until fragrant.
Increase the heat to medium-high and add the shrimp. Season with salt and pepper. Sauté the shrimp for about 2 minutes per side until they turn pink and are just cooked through.
Squeeze in the lemon juice and toss to combine all the flavors. If desired, add a splash of water or low-sodium broth to help create a light sauce.
Add the zucchini noodles to the skillet and gently mix them with the shrimp and sauce, warming the noodles without overcooking them.
Remove from heat and garnish with chopped fresh parsley before serving.
