INGREDIENTS
1 cup cooked chickpeas (164g)
1/4 cup crumbled extra firm tofu (50g)
2 Tbsp chickpea flour (16g)
1/4 cup chopped fresh parsley (15g)
1/4 cup chopped fresh cilantro (15g)
1 small chopped onion (40g)
3 garlic cloves
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/4 tsp baking powder
1 tsp olive oil (for pan-frying)
1 Tbsp tahini (15g)
1/4 cup nonfat Greek yogurt (60g)
1 Tbsp fresh lemon juice
1 cup mixed greens (20g)
2 Tbsp fresh mint or extra parsley
PREPARATION
If using dried chickpeas, soak them overnight and then cook until tender. For this recipe, use 1 cup of cooked chickpeas.
In a food processor, combine the cooked chickpeas, crumbled tofu, chickpea flour, chopped parsley, cilantro, onion, and garlic. Blend just until combined but still slightly chunky.
Transfer the mixture to a bowl and add in the ground cumin, ground coriander, salt, and baking powder. Mix well to incorporate all the spices.
Form the mixture into 4 evenly sized patties or balls.
Heat olive oil in a nonstick skillet over medium heat. Fry the falafel patties for about 3-4 minutes per side until golden and crispy. Alternatively, they can be baked at 400°F for 15-18 minutes, turning halfway through.
For the sauce, in a small bowl whisk together tahini, nonfat Greek yogurt, and fresh lemon juice until smooth. Adjust seasoning if necessary.
In a serving bowl, place the mixed greens and toss with fresh mint or extra parsley.
Plate the crispy falafel alongside the herb salad, and drizzle the creamy tahini-Greek sauce over the falafel or serve on the side.
Enjoy your balanced and flavorful meal!
