Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Place the sweet potato cubes on the prepared baking sheet, ensuring they are in a single layer.

Arrange the chicken thighs on another baking sheet or alongside the sweet potatoes if space permits, making sure there is room for the skin to crisp up.
