PREPARATION
Crack the eggs into a bowl and whisk until well combined, seasoning lightly with salt and pepper.
Slice the lean turkey sausage into small rounds or crumble it if preferred.
Heat half the olive oil in a non-stick skillet over medium heat and add the turkey sausage. Sauté for about 3-4 minutes until lightly browned.
