INGREDIENTS
6 oz Lean Sirloin Steak
1 small Sweet Potato
1 cup Asparagus
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Fresh Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F for roasting the sweet potatoes and asparagus.
Peel (if desired) and dice the sweet potato into small cubes. Toss the cubes with olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking sheet and roast in the oven for 20-25 minutes until crispy.
While the sweet potatoes roast, season the 6 oz steak evenly with salt, pepper, and chopped fresh herbs.
Heat a skillet over medium-high heat and add a little olive oil. Sear the steak for about 3-4 minutes per side for medium-rare, adding minced garlic during the last minute of cooking.
In the final 10 minutes of the potato roasting time, add the asparagus to the baking sheet, drizzling lightly with olive oil and a pinch of salt.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
Plate the sliced steak with a side of crispy roasted sweet potatoes and tender asparagus. Serve immediately.
