1 medium Sweet Potato
1 tbsp Maple Syrup

PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and lightly spray with olive oil.
Place the sweet potato, cut into 1/2-inch rounds or cubes, on the baking sheet. Drizzle a little olive oil spray over them, and season with salt and pepper. Roast for 20-25 minutes until tender.
Meanwhile, pat the salmon fillet dry. Season it lightly with salt and pepper.
Preheat a non-stick skillet over medium heat. Place the salmon, skin-side down if applicable, and cook for about 3-4 minutes on each side until it’s nearly cooked through.
In the last couple of minutes of cooking, brush the salmon generously with maple syrup. Let the glaze caramelize slightly on the fish.
Remove the roasted sweet potatoes from the oven.
Plate the maple-glazed salmon alongside the roasted sweet potatoes and serve immediately.
