PREPARATION
Pat the chicken breast dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add half the olive oil. Sear the chicken breast for about 5-6 minutes per side until cooked through, then remove and let it rest before slicing.
