INGREDIENTS
6 oz Chicken Breast
1/2 medium Sweet Potato
1 tsp Olive Oil
1 tbsp Lemon Juice
1 tsp Fresh Thyme
1 tsp Fresh Rosemary
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
Pat dry the chicken breast with paper towels. Season both sides with salt, pepper, thyme, and rosemary.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breast for 2-3 minutes on each side until golden and crispy.
While the chicken sears, peel and cut the sweet potato into 1/2-inch slices or cubes. Toss the sweet potato pieces with a little olive oil, salt, and pepper.
Transfer the sweet potatoes to a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, turning halfway, until tender and slightly caramelized.
Once the chicken is seared, drizzle lemon juice over it and transfer the skillet to the oven. Bake for an additional 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Plate the chicken alongside the roasted sweet potatoes and serve immediately.
