INGREDIENTS
1 large Bell Pepper (150g)
110g Lean Ground Turkey
15g Lean Turkey Pepperoni
1 oz Fat-Free Mozzarella Cheese (28g)
1/4 cup Unsweetened Tomato Sauce (60g)
1/3 cup Whole Wheat Breadcrumbs (25g)
1 clove Minced Garlic
1/2 teaspoon Dried Basil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C).
Cut the bell pepper in half lengthwise and remove the seeds and membranes, creating two bowl-like halves.
In a skillet over medium heat, add the lean ground turkey and minced garlic. Sauté until the turkey is browned and cooked through. Season with salt, pepper, and dried basil.
Stir in the unsweetened tomato sauce and whole wheat breadcrumbs into the turkey mixture. Allow the mixture to heat through for 2 minutes.
Spoon the turkey and breadcrumb mixture evenly into the bell pepper halves.
Top each stuffed pepper with lean turkey pepperoni slices and sprinkle the fat-free mozzarella cheese evenly over the top.
Place the stuffed pepper bowls on a baking sheet and bake in the oven for 15-18 minutes, or until the cheese is melted and slightly bubbly.
Remove from the oven and let cool for a few minutes before serving.
