INGREDIENTS
6 ounces Salmon Fillet
1 cup Asparagus
2 teaspoons Olive Oil
1/4 Lemon
1 Garlic clove
1 teaspoon Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim the asparagus and place it on a baking sheet. Drizzle with 1 teaspoon of olive oil, squeeze lemon juice over, sprinkle with salt, pepper, and fresh thyme. Toss to coat evenly.
Roast the asparagus in the oven for about 10-12 minutes until tender and slightly charred.
Meanwhile, pat the salmon fillet dry with a paper towel. Season both sides with salt and pepper.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat. Add the salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy.
Carefully flip the salmon and add a crushed garlic clove and a few drops of lemon juice to the pan. Cook for another 3-4 minutes until the salmon is opaque and flakes easily.
Remove the salmon from the pan and plate alongside the roasted asparagus. Garnish with a bit of lemon zest and extra thyme if desired.
