This dish delivers a satisfying and flavorful meal with bright, fresh spinach, the warm depth of garlic, and the natural sweetness of mashed potato, all tied together with a finish of extra virgin olive oil.
INGREDIENTS
5 oz Salmon Fillet
1 cup Fresh Spinach
2 cloves Garlic
1 medium Sweet Potato
2 tbsp Extra Virgin Olive Oil
10 g Walnuts
Salt and Black Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat and season the salmon fillet with salt and black pepper on both sides.
Add 1 tablespoon of extra virgin olive oil to the skillet. When hot, sear the salmon for about 3-4 minutes per side until the exterior is crisp and the interior is just cooked through.
Meanwhile, peel and dice the sweet potato. Boil in lightly salted water until soft, about 15 minutes. Drain and mash with a drizzle of olive oil, salt, and pepper until smooth.
In a separate pan, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add the fresh spinach to the pan with garlic and toss until just wilted, about 2 minutes. Season lightly with salt and pepper.
Plate the sweet potato mash as a base, top with the seared salmon, and nestle the garlic spinach on the side. Sprinkle chopped walnuts over the mash for added crunch and flavor.
