INGREDIENTS
250 grams Extra-Firm Tofu
100 grams Asparagus
1 tablespoon Peanut Butter
1 teaspoon Soy Sauce
1 teaspoon Rice Vinegar
1 teaspoon Sriracha Sauce
0.5 tablespoon Olive Oil
1 teaspoon Cornstarch
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu lightly to remove excess moisture, then cut it into cubes. Gently toss the tofu cubes with the cornstarch to evenly coat.
Place the tofu on the baking sheet and lightly drizzle with a portion of olive oil. Bake for 25-30 minutes until edges are crispy and golden, turning halfway through.
While the tofu bakes, trim the woody ends from the asparagus and place them on a separate baking sheet. Drizzle with the remaining olive oil and season lightly. Roast in the oven alongside the tofu for the last 15 minutes.
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, and sriracha sauce to create a smooth, creamy peanut sauce.
Once the tofu and asparagus are roasted, plate them and drizzle generously with the creamy peanut sauce. Serve immediately and enjoy the blend of crispy tofu, tender asparagus, and rich sauce.
