Enjoy these golden, crispy tuna patties that pack a punch of flavor and protein. The combination of tender tuna, a binding egg, and a hint of herbs and spices creates a satisfying meal perfect for breakfast, lunch, or dinner. They’re lightly pan-seared, giving them a delightful crunch while keeping the inside moist and nutritious.
INGREDIENTS
1 can Canned Tuna (165g drained)
1 Large Egg
2 Tbsp Whole Wheat Breadcrumbs
1 tsp Olive Oil
2 Tbsp finely chopped Red Onion
2 Tbsp chopped Fresh Parsley
1 tsp Lemon Juice
Salt and Black Pepper to taste
PREPARATION
Drain the canned tuna and transfer it to a medium bowl.
Add the egg, whole wheat breadcrumbs, finely chopped red onion, chopped parsley, lemon juice, salt, and black pepper into the bowl with the tuna.
Mix all ingredients thoroughly until well combined, ensuring the breadcrumbs and egg evenly bind the tuna.
Form the mixture into patties, about 3-4 inches in diameter.
Heat the olive oil in a non-stick pan over medium heat.
Once the oil is shimmering, carefully place the patties in the pan, ensuring not to overcrowd.
Cook the patties for about 3-4 minutes on each side, or until they are golden and crispy.
Remove from the pan and let them rest for a minute before serving.
