INGREDIENTS
5 oz Ground Turkey (lean)
1 medium Sweet Potato
1/2 cup Red Bell Pepper, diced
1/4 cup Yellow Onion, diced
1 cup Spinach
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Rinse and dice the red bell pepper and yellow onion. Rinse the spinach and set aside.
Heat a non-stick skillet over medium heat and add the olive oil.
Add the diced sweet potato to the skillet and cook for about 5-7 minutes, stirring occasionally, until they begin to soften and develop a slight crisp on the edges.
Add the diced onion and bell pepper, and continue to sauté for an additional 3-4 minutes until the vegetables are tender.
Push the vegetables to one side of the skillet and add the ground turkey. Break it apart with a spatula and cook until browned and cooked through, about 5-6 minutes.
Mix the vegetables with the turkey, then add the spinach and stir until wilted. Season with salt and pepper to taste.
Serve warm and enjoy your crispy and nutritious hash.
