200g Extra Firm Tofu
1 cup Broccoli

Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu gently to remove excess moisture and cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Spread the tofu onto half of the baking sheet and lightly drizzle with a little olive oil to help crisp up.
In another bowl, combine the broccoli and bell peppers with the remaining olive oil, salt, and pepper.
Arrange the vegetables on the other half of the baking sheet in a single layer.
Bake in the preheated oven for about 25-30 minutes, turning the tofu and stirring the vegetables halfway through, until the tofu is crispy and the vegetables are tender and slightly charred.
