INGREDIENTS
400g Extra Firm Tofu
1 medium Red Bell Pepper (120g)
1 cup chopped Broccoli (91g)
0.5 cup Snap Peas (50g)
1 small Carrot (50g)
1 tbsp Sesame Seeds (9g)
1 tbsp Sesame Oil (14g)
1 tbsp Low Sodium Soy Sauce (16g)
1 tsp Rice Vinegar (5g)
1 clove Garlic (3g)
1 tsp Fresh Ginger, grated (2g)
PREPARATION
Press the tofu for at least 20 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, whisk together the low sodium soy sauce, rice vinegar, minced garlic, and grated ginger to form a flavorful marinade.
Gently toss the tofu cubes in the marinade and let sit for 10 minutes.
While the tofu marinates, prepare the vegetables by slicing the red bell pepper, chopping the broccoli, trimming the snap peas, and thinly slicing the carrot.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes and stir-fry until they become crisp and golden on all sides, about 5-7 minutes.
Add the prepared vegetables to the skillet and continue stir-frying for an additional 4-5 minutes until the vegetables are tender but still crisp.
Sprinkle sesame seeds over the stir-fry and give it a final toss to combine all the flavors.
Serve immediately, enjoying the blend of crispy tofu and fresh, vibrant vegetables.
